Fitness & Nutrition: Healthy Carrot cake with protein Frosting! (Gluten free ,wheat free and no added sugar)

Ingredients 
Cake (serves 6 ) Frosting (To cover the whole cake )
180 g carrot 4 tbsp. Fage 0% Yoghurt 
1 medium red apple 1 scoop protein ( cinnamon danish )
30g raisins Sprinkle of grated raw carrot 
35g dates Sprinkle of crushed nuts 
25g unsalted cashews 2 tsp. of coconut flour 
25g almonds 
1 egg 
85 ml water cold 
2 tsp. mixed spice 
1 1/2 tsp. of nutmeg 
1 tsp. of ground ginger 
2 tsp. of cinnamon 
60 g gluten free oats
Macros (per serving)
Calories = 183.66 Kcals
Carbs = 31.13g
Protein = 9.925g
Fats = 5.825g
Method 
Cake : 
Grate carrot & apple into a mixing bowl 
Add dried fruit & nuts and spices mix well 
Whisk egg & water together and add to bowl 
Mix in oats , until mixture us completely combined 
Add cake mixture to baking tin lined with grease proof paper 
Turn oven on to 200 c and bake for 30 mins 
Cover to stop burning and cook for a further 20- 30 mins until cooked through 
Remove from oven and place on a cooling rack
Icing : 
Mix protein , Fage 0% yoghurt and coconut flour in a dish until protein is completely broken down 
Put into fridge for 20/ 30 mins to set 
mixture should not be runny
Once cake is cooled spread frosting on top and decorate with shredded carrot and nuts
